In particularly successful years, some of the bottles are put aside, allowing the wine to move on to the next period of aging, with the peak occurring in an interval 14 and 20 years after the harvest. The wine acquires greater depth and strength. At the third and last stage (more than 25 years), the wine reaches full maturity, becoming exceptionally rich and complex.

The P2 index means Second Plénitude. The long sur lie aging (11–20 years) reveals all the richness of this champagne and the intensity and fullness of its flavor.
